Plant Based/Gluten Free Cheesy Mac
1 Butternut Squash
1/4 cup Nutritional Yeast
Pinch of Tumeric
Pinch Of Pepper
1 Cup of Cashews
1 cup of plant based milk ( I love oat milk!)
Pasta( I used Banza!)
Soak cashews. leave 1 cup of cashews in purified water for a half hour to 1 hour for best results. This can be made without soaking the cashews but this helps with digestion and creaminess.
Boil a pot of water.
Cut up butternut squash into squares. I did not peel. Make sure not to include the seeds and pulp. Add butternut squash to water. Cook until soft. Strain the squash from the water.
Boil another pan of water for your pasta. Cook pasta thoroughly.
Add squash, cashews, nutritional yeast, turmeric, and milk to a blender. Blend until smooth.
Drain pasta. Once on a serving plate, add the cheese mix. Top with pepper!
So creamy and delicious!
